It’s winter time in my neck of the woods. Although with the decent temperatures lately, you’d hardly know it. None the less, I have been dying to make stew and I’m so happy I finally got around to it. For good reason too! I received this breathtaking Le Creuset 5 1/2 Qt. French Oven in the mail a couple of weeks ago and I’ve been contemplating the perfect way to break it in. I couldn’t have chosen a better meal than my Sweet Potato Beef Stew. It’s warm, cozy, and all sorts of comforting!
There are so many things to love about Le Creuset. One of my favorite features are all of the vibrant colors you have to chose from! Just look at that Caribbean color!!! Swoon worthy for SURE! Another great benefit is the colorful, long-lasting exterior enamel is resistant to chipping and cracking. Additionally, the interior enamel is engineered to resist staining and dulling. Although they are heavier than your traditional pot or pan, the oversized handles provide even weight distribution and a secure grip. Have I talked you in to one yet? If you STILL need convincing, the ergonomic composite knobs are heat resistant to 500°F! Whoa. You can use your french oven on any surface and even in the oven! So much to love and so many uses! I highly recommend any of the Le Creuset products, but if you don’t get anything else: getcha ‘self one of these 5 1/2 Qt. French Ovens!
Sweet Potato Beef Stew
A delicious hearty Sweet Potato Beef Stew that's delicious and healthy! It's the perfect one pot meal!
Ingredients
- 1 pkg. McCormick Beef Stew Seasoning Mix
- 2 lbs. stew beef cut into 1-inch cubes
- 3 tbsp. whole wheat flour
- Salt & pepper to taste
- 2 tbsp. oil
- 3 c. water
- 3 large sweet potatoes more or less depending on preference
- 1/2 large onion
- 1 celery stalk
- 5-10 medium carrots peeled
Instructions

Chop vegetables into small pieces. Prepare stew meat according to directions on McCormick Seasoning mix, coating with whole wheat flour, salt, and pepper.

Mix together seasoning packet & water. Once beef is seared, add all vegetables and water. Cook in oven at 350 F for 2 1/2 - 3 hours, or until vegetables are tender.

Thicken stew with additional flour, depending on preference.
