If you can’t tell, I’ve got a thing for soups and stews. When the weather starts cooling down, I break out my warm weather soup recipes (and usually my slow cooker too!). On of our favorite recipes is my Slow Cooker Vegetarian Chili. It’s divine! We had family over the other night and I thought I’d switch it up a bit and throw in some meat. I also realized that I was out of a few ingredients and needed to improvise. The result? This wonderfully delicious Hearty Turkey Chili!
My slow cooker (or crock pot) has been working in overdrive the past few weeks and I’ve been loving every minute. It’s so nice to have the extra time to worry about everything else there is to worry about, while letting the slow cooker do all of the work. Not to mention making your house smell amazing for hours on end. Although this recipe is stove-top, it can easily be made in to a crock pot meal with the use of dry beans, that are also better for you anyway! I know everyone has a great chili recipe, but this one truly is one that you should make!
Hearty Turkey Chili
This Hearty Turkey Chili will be just what you need on those cool evenings - nothing warms you up like a bowl of yummy delicious hearty chili! . Whip up some homemade cornbread, serve with a side salad, and you've got a fantastic dinner!
- 1 lb. ground turkey
- 1 red bell pepper diced
- 1 red onion diced
- 5 cloves garlic minced
- 1 tbsp. olive oil
- 2 15 oz. cans kidney beans, drained and rinsed
- 1 15 oz. cans black beans, drained and rinsed
- 1 15 oz. cans pinto beans, drained and rinsed
- 1 c. frozen corn
- 2 28 oz cans crushed tomatoes
- 4 c. water
- 1 tbsp. chili powder
- 2 tsp. cumin
- 1 tsp. coriander
- 2 tsp unsweetened cocoa powder
- 1 tsp. garlic powder
- 1/4 tsp. cayenne pepper
- 1/2 tsp. salt
- 1 tsp. smoked paprika
- 1 tsp. regular paprika
In a large pot, saute bell pepper, onion, and garlic with olive oil. Add ground turkey and brown. Add remaining ingredients.
Cook on medium-high 30 minutes. Stir frequently.
