The third and final recipe I made for the Salt Lake Home Show I was probably most excited for. After my Healthier Zupas Nuts About Berries Salad Copycat and Mashed Cauliflower Shepherd’s Pie, I whipped together this baby! This recipe couldn’t be more representative of the theme of the hour: ‘The Lighter Side: Your Guilty Favorites Made Guilt Free’. At first glance, you’ve got to think that yummy chocolate buttercream is loaded with all sorts of sugar. Nope!
Last summer when the hubs and I completed our cleanse, the way we split the 30 days was with the first two weeks being an all juice fast and the remaining two weeks being a raw food diet. During the raw food phase I experimented with a handful of recipes from This Rawsome Vegan Life (her recipes are AMAZING!!!!). I made her Strawberry & Chocolate Buttercream Tart and I about died. I had never tasted anything more divine that was 100% guilt free. In that moment, my life changed forever. I knew I could live my entire life without ever once using refined sugar again! I wish I could say I haven’t since then, but I’m still far better than I used to be! You’ve got to check out this healthy recipe. It will blow your mind how delicious the chocolate buttercream is. Strawberries & Chocolate Buttercream Mousse
- 1 c. dates
- 3/4 c. water
- 1/4 c. cacao powder
- 2 tbsp. cashew butter
- 2 tbsp. coconut oil
- 2 tbsp. real maple syrup
- 2 c. strawberries, washed & sliced
- In a blender or food processor, blend all ingredients until smooth. Refrigerate overnight so to develop flavors and mousse-like consistency. When ready to serve, top with strawberries.
