Line up a strawberry, blueberry, and let’s say…. blackberry. If I had to choose a favorite, I would go for the strawberry. I love them! I love their vibrant color, I love their sweet taste, and I love how they are perfect in anything. Parfaits, smoothies, cereal, dipped in fruit dip, or even just plain. Strawberries not too long ago made an appearance in my Fruit & Yogurt Breakfast Parfait with Honey Almond Granola (a must see). Now they are making an appearance in this delicious dessert parfait.
When I was contemplating the topping for this parfait I didn’t want to use granola (I use granola in a lot of recipes and wanted to try something new for once. I was quickly reminded of why I love ‘crisps’ so much. Because of the CRISP! I remember way back in the archives of the most delicious Apple Crisp recipe that I posted a long time ago. I figured, surely there’s a way to make the crumb topping to be used in other ways. It worked! Exactly how I wanted it to! The best part about this dessert is that it’s not hardly sweet at all. It’s absolutely perfect!!!
Red White & Blue Strawberry Blueberry Dessert Parfait
Ingredients
For the crisp topping
- 1 c. rolled oats
- 1/3 c. brown sugar
- 1/2 c. flour
- 1/2 tsp. cinnamon
- 1/4 c. softened butter
For the fresh whipped cream
- 1 1/4 c. heavy cream
- 2 tsp. powdered sugar
- 1/2 tsp. vanilla
- Strawberries washed, stems removed & quartered
- Blueberries washed
Instructions

Mix together the topping: oats, sugar, flour, cinnamon, and butter, until crumbly. Bake at 350 F for 10-15 minutes or until golden brown. Remove from oven & cool.

Prepare your fresh whipped cream by whipping the cream, powdered sugar, and vanilla together until stiff peaks form.

Layer parfait with strawberries, fresh whipped cream, blueberries, and top with crisp topping. Serve immediately.

Tips for the perfect whipped cream:
If you can, start with cold everything: cream, bowl, and beaters. Keep the cream refrigerated until ready to use. I measured mine out and placed the measuring cup in the freezer (but watch closely, it freezes fast). I also put my Bosch mixing bowl and beaters in the freezer for at least 10 minutes before I was going to use it to whip the cream. The colder the better. The whipped cream should come together in approx. 3 minutes. Don't whip too long, otherwise you'll make butter!
