Happy New Year! It’s officially the first day of the year. I took a bit more time off in December than I was initially planning on, so it’s been a minute since you’ve seen a great recipe around these parts. You know what though? That’s the beauty of being your own boss: you get to call the shots! I will say that while I was away I enjoyed one too many sweets and treats and now it’s time to detox. THANK YOU Simple Green Smoothies for helping me get my life back in order. This red velvet smoothie is on point. I’ve decided to jump onto the 30-Day Smoothie Challenge and I couldn’t be more excited.
I actually attempted this back in October but failed miserably. I have higher hopes this time around as I’ve got a plan in order. I really wanted to try the Beginners Luck for day one – but didn’t have mango, so I’ll save that one for another day. Red Velvet Smoothie
Clean up your diet with this excellent healthy and delicious Red Velvet smoothie. With just a touch of chocolate, this is the healthiest red velvet you'll ever devour! Enjoy this as a diet jumpstart, healthy snack, or holiday treat!
Ingredients
- 2 c. fresh spinach or super greens mix
- 2 c. coconut milk unsweetened
- 2 c. strawberries
- 4 dates pitted
- ¼ c. diced raw or cooked beets
- 1 tbsp. cacao powder
- ½ tsp. vanilla extract optional
Instructions

Blend spinach and coconut milk until smooth. Add remaining ingredients, and blend until smooth.
Recipe Notes
If you'd like, you can add coconut whipped cream on top. *Use frozen fruit to make smoothie cold.
