There are so many health benefits to juicing. There are also endless combinations of great juices. Both tasty and good for you. Last year when we completed our 30 day juice fast we randomly stumbled on this combination of carrot, apple, and beet. It was during that fast that I fell in love with beet juice. I already love them pickled, who knew I would love them juiced? They actually bring a sweetness to the juice that I was pleasantly surprised about. Throw in some carrots and apples and you’ve got yourself a delicious concoction.
While I know people are one one side of the fence or the other with beets – I’m in the camp that love them. In fact, I hear mostly that the reason they aren’t loved is because they taste like dirt. I’ll let you in on a little {not-so} secret. I LOVE the taste of dirt. I’ve shared this before, and the first comment is usually: you must be pregnant. Nope. My love of dirt goes all the way back to my elementary days. I love the feel of grit in my teeth (not to be confused with seeds, I do not like seeds in my teeth.. which is why I do not love most berries). The next most popular comment I get {following the pregnancy one} is that I’m deficient in a mineral. I’m fairly certain that’s what the case is. However, I’ve never looked deeper in to it. The joke is often that in a sand storm while everyone is turning away, I’m happily facing the storm with my mouth wide open. Ha! But no seriously. I’m weird.
