Familiar with overnight oats? I mentioned yesterday in my recipe for my Orange Banana Breakfast Smoothie, that Saturday night I had the opportunity to present at the Salt Lake Home + Garden Festival at the South Towne Expo and showed four ways you can begin your day with a quick & easy healthy breakfast! This was another one of the delicious recipes! Overnight oats are an awesome filling breakfast that you can prep the night before and grab on your way out the door during your rushed morning. Made with only four ingredients plus your fruit of choice (I love the combo of strawberries and bananas) you are less than 10 ingredients and all of about 10 minutes or less prep work!
During my demo, I also made one of my favorite granola recipes, my Honey Almond Granola Recipe. Once I whipped that up, I made my Fruit & Yogurt Breakfast Parfait with Honey Almond Granola. The point of the hour was to prove that with a little preparation you really can have a pretty rockin’ breakfast that’s not covered in sugar like the popular sugar-coated breakfast cereals or carb-heavy breakfast pastries that are all too often too convenient to grab. Tomorrow I’ll post the last recipe, and I’m pretty sure I save the best for last! Come back soon!
Strawberry & Banana Overnight Oats
- 1/2 c. old fashioned organic rolled oats
- 1/2 c. vanilla Greek yogurt (I used my favorite brand, Greek Gods)
- 1 tbsp. chia seeds
- 2/3 c. almond milk, or milk of choice
- 1 banana, diced
- 2-4 strawberries, diced
- In a medium sized bowl, combine oats, greek yogurt, chia seeds and almond milk. Divide into 2 half pint mason jars. Cover and refrigerate overnight. Divide the fruit in half and add to each mason jar. Enjoy chilled or heated to desired temperature.
