There are so many yummy delicious unhealthy recipes flying all over the internet this time of year. The holidays get people a little bit crazy over sweets and treats (myself included, I’ve got to be careful!). When I was contacted to try a few of the Dr. Praeger’s Veggie Pancakes I was eager to get my hands on a healthy AND delicious product. I’ve been nothing short of impressed by not only the ease and flavor, but most importantly: the ingredient list! With the slogan ‘Where You Recognize All The Ingredients’ I knew this company was made for me!
I’m a huge advocate of the importance of breakfast, and why not ‘have cakes for breakfast’? These veggie pancakes were absolutely perfect for breakfast burritos. The sweet potato, spinach, and broccoli veggie pancakes married wonderfully together within this breakfast burrito. In fact, I don’t have kids, but I can almost bet they’d fall head over heals for this breakfast. They are delicious! Not only is this a healthy meal, it’s also hearty and filling – the perfect way to get your day started on the right foot.
Veggie Lovers Breakfast Burritos
These Veggie Lovers Breakfast Burritos are loaded with delicious veggies and will keep you full until lunch!
Ingredients
- 5 eggs
- 1 large potato cubed
- 1 tbsp. butter
- 1 Dr. Praeger's Spinach Pancakes patty
- 1 Dr. Praeger's Broccoli Pancaks patty
- 2 Dr. Praeger's Sweet Potato Pancakes patty
- 1/4 c. cheddar cheese shredded
- Salt and pepper to taste
- 6 whole wheat flour tortillas
Instructions

In a medium pan, cook potatoes in butter until brown and crispy, approx. 7-10 minutes.

Cook Dr. Praeger's veggie patties according to package directions: heat oven to 450 F, cook for 5 minutes on one side, cook an additional 4 minutes on other side.

Scramble eggs and cook until light and fluffy. Remove Dr. Praeger's veggie patties and cube.

Assemble burritos on whole wheat tortillas with cubed potatoes, cubed veggie patties, scrambled eggs and shredded cheese. Salt and pepper to taste. Roll tortilla into a burrito. Serve immediately.
