I can’t even tell you how long it’s been since I’ve wanted to make baked eggs. A long time. We all know breakfast is my favorite meal, so for this series of quick and easy 30-minute meals I’ve been most excited for new breakfast recipes. When I got my insanely adorable mini Le Creuset Mini Round Cocotte individual serving dishes I knew it was time. I mean, come on. Doesn’t this little meal just look absolutely adorable??
There are several things I love about these baked eggs. 1. I love that they are portioned perfectly for easy calorie counting. From a calorie counting perspective, it’s recipes like these that don’t make calorie counting as daunting of a chore as it can often be. 2. They are healthy! They are packed with protein and a way you can start your day and feel good about. With turkey meat, cheese, spinach and egg – this is a breakfast that is well rounded! 3. You will probably most of the time have all of the ingredients right on hand. The only exception being possibly the spinach. Since my hubs is a juicing fiend, we’ve always got spinach on hand. 4. How quick and easy they are to put together. I mean, what’s the hardest part of this meal {besides waiting for them to be ready}? Cracking the eggs! If that’s as hard as it gets, sign me up.
Quick & Easy Egg Bake Breakfast
This Quick & Easy Egg Bake Breakfast is well balanced and healthy and can be thrown together in no time!
Ingredients
- 4 eggs
- 4 slices deli turkey meat
- 1/2 c. shredded cheddar cheese
- Handful of spinach leaves
- Salt & pepper to taste
Instructions

Preheat oven to 400.

Prepare your small round baking dishes (if you don't have a Le Creuset Mini Round Cocotte, you can also use a ramekin), with an even coating of cooking spray.

Layer two slices of deli meat per baking dish. Top your meat with a small handful of spinach leaves, followed by 1/4 c. cheese per dish and finish with 2 eggs. Sprinkle with salt and pepper.

Bake for 20-25 minutes depending on preferred egg consistency.
Recipe Notes
I don't like my eggs runny, so I opted to cook them closer to 25 minutes, feel free to cook longer or shorter according to your preference.

Because I am a Weight Watcher, I made a few modifications your recipe. I used 1 thinly sliced piece of ham (I prefer that over turkey) and circled it around the greased ramekin. I added about 1/4 cup of fresh baby spinach (maybe more) used only 1 mounded TBLSP of cheese and one egg. Baked per your directions, but only 20″ for me as I like a runny yolk. Perfect and DELICIOUS! 5 WW pts, loaded with protein, GOOD fat and NO sugar! Thank you!!!

I LOVE breakfast, but hate cooking it myself because I can never get the timing right for everything to be hot and ready at the same time. This is perfect with everything in one dish and even in individual serving bowls so it goes right from oven to table. BONUS for you to get to use your new Le Cruesets.
