I’ve always enjoyed breakfast casseroles but for some reason I only have them once maybe twice a year. Usually the once a year falls on Easter – we have a breakfast potluck at church and I will always get this :) Funny that the first time I make it for myself I didn’t even follow a recipe! Booyah, this turned out fabulous and soooooo delicious! It was the perfect balance of everything. Steve and I don’t ever buy hash browns so I decided to try shredding potatoes with my FAVORITE kitchen appliance, my Kitchen Aid food processor and they shredded marvelously! Can’t wait to try this for my family, I know they will love it too!
Breakfast Casserole
This Breakfast Casserole is a great dish for those weekend breakfast times when you've got a little extra time and want something a little more special. It's easily customizable and very tasty!
Ingredients
- 4 c. hash browns
- 1 lb. thick-cut bacon 1 lb. pkg. Jimmy Dean sausage, or 1 lb of ham, diced
- 1/2 onion finely chopped
- 6 eggs scrambled
- 1/4 c. butter
- 1/4 c. milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 c. cheese divided
Instructions

Preheat oven to 350 F.

In a medium size pan brown meat of choice together with onion until fully cooked.

In a separate saucepan melt butter; add salt and pepper.

Pour hash browns in a 9×13 baking dish and cover with melted butter; mix together with 1 c. shredded cheddar cheese. Top with sausage and onions. Scramble together eggs and milk. Pour scrambled egg mixture and over casserole.

Cover with aluminum foil and bake for 45 minutes. Uncover and top with remaining cup of cheese, bake for additional 15 minutes.
