Ohmywordy, can you believe that Halloween is this week? Really I’m more shocked that it means that October is quickly coming to an end. QUICKLY. Ugh. What is happening to my life? It’s passing before my very eyes. I was warned of this. It’s true. Graduate high school and time moves at warp speed. Anywhoo, what are your plans for the weekend? My sister sent the funniest card to the hubs and me this week it was a Maxine card and on the front it said ‘Every Halloween I pretend to be the same thing…’ and on the inside it reads ‘Not at home.’ Ha! If you know my family at all that’s exactly how we’ve been my whole life. I didn’t grow up dressing up or going trick or treating. Shocker? I’m used to it at this point. The card was ridiculously accurate. I laughed out loud.
Anyway, how about these fantastic Tropical Candy Corn Popsicles? Let’s talk candy corn for a minute. I saw a graphic on FB recently that said something like: ‘How To Eat Candy Corn: throw it out’. Hahah.. Again. I laughed out loud. Too dang funny. Do you know what candy corn is made of? “Candy corn is made primarily from sugar, corn syrup, confectioners wax, artificial coloring and binders.” Ick. So I’ve taken the ‘candy corn’ idea and made it healthy for you! First was my Tropical Candy Corn Parfait (can you tell I’m a fan of the tropics? Take me there NOW!). I love that you can take traditional Halloween sweets and treats and give them a healthy twist. Up next will be my Healthy Candy Corn Parfait with a non-traditional parfait ingredient (watch for that in the next couple of days)!
I’m feeling chatty today. I’m new to popsicles this year on Tried and Tasty and I LOVE them! First my Sweet & Tart Strawberry Lemon Popsicles and then my Peach Mango Lemonade Popsicles. I couldn’t get my hands on my Norpro Ice Pop Maker fast enough. It makes perfect popsicles every time. Just look at those babies. Don’t you just want to sink your teeth right in to them? They aren’t just for summertime, these babies are perfect anytime if you ask me! Ask me again when there’s three feet of snow outside. I might change my mind. For now the weather has been gorgeous and I’m enjoying my tropical popsicles dang it – and I think you should to! The perfect healthy way to celebrate this weekend!

Tropical Candy Corn Popsicles
These Tropical Candy Corn Popsicles is a healthy variation of the popular Halloween treat for all of your guilt-free treat needs! Perfectly tropical with the flavors of coconut, pineapple and orange you're tastebuds will say THANK YOU!
Ingredients
- 1 c. coconut yogurt I used Noosa brand, it's one of my favorites
- 1/4 c. coconut puree
- 1 3/4 c. orange juice
- 1/4 c. mandarin puree
- 1 c. pineapple orange juice
Instructions

Mix together coconut yogurt and coconut puree. Pour enough of coconut mixture to fill a little less than 1/3 full into each popsicle mold. Place in freezer for 15 minutes until almost solid.

In another bowl, mix together orange juice and mandarin puree. Remove mold from freezer, add about 1/3 c. or so of orange juice mix to molds. Place in freezer for 10 minutes.

Insert wooden sticks into popsicle mold. Freeze for another 10 minutes.

Add pineapple orange juice to reach just under the top of the mold. Return mold in the freezer. Freeze for at least 4 hours to fully set.
