I am SO excited to be participating in my friend Alli’s 30 Days of Halloween series this year! Can you believe we are in September right now? It blows my mind. The hubs and I just got back from the best camping trip with friends this past weekend and I could tell that summer was fleeting. The leaves have starting turning to fall colors and there was a chill in the air. It nearly breaks my heart. I must let go. I know. What would make me feel better? Candy corn. Not THE candy corn of course, but this delicious healthy breakfast/snack/treat rather.
I’m really not a candy corn fan. The *only* way I used to eat it was with dry roasted peanuts. Have you ever done it? Tastes JUST like a payday candy bar. I kid you not. Beware. It’s addicting! I wanted to share with you a healthy way to enjoy the upcoming holiday. While candy will soon be thrown at you in every which direction you can imagine you don’t HAVE to walk around in a sugar coma for the entire month. If you’re like me you may want to be transported to a tropical location. Most likely you won’t be able to, so I’m bringing the tropics to you with this Healthy Candy Corn Parfait! I mean, is there a better reason to bust out the mini trifle bowls? I think not! I used Noosa Coconut Yogurt (which in my opinion is one of the best yogurt brands out there – along with Tilamook of course). It’s thick & creamy and throughout you’ll find actual shredded coconut. YUM! Paired perfectly with the mango and pineapple. Give it a try – and if you do, let me know! I’d love to hear what you think!

Tropical Candy Corn Parfait
- 1 c. coconut yogurt
- 1 c. diced mango
- 1 c. diced pineapple
- In a small bowl, glass, or trifle, layer your pineapple, mango and yogurt.
