Three words for you de-lic-ious! Ok, well that’s not exactly three words – but it might as well be. These Rolo cookies will be the talk of any party. I think they are absolutely off the charts when they are still warm (and even when they are not still warm). Wow. I made them for my sis-in-law and her family and Ang raved about them, she absolutely loved them! It made me feel so good. There’s nothing more satisfying than when someone enjoys something homemade that you’ve shared with them!

Rolo Cookies
These Rolo Cookies are the most chocolatey caramel bit of heaven. Ever bite in to a cookie with a Rolo in the center? If not. You are missing out. If so. You know what amazingness lies within.
Ingredients
- 3 c. flour
- 3/4 c. cocoa
- 1 c. sugar
- 1 tsp. baking soda
- 1 c. brown sugar
- 1 c. butter or margarine
- 2 tsp. vanilla
- 2 eggs
- 48-50 Rolos
Instructions

Preheat oven to 375 F.

Combine flour, cocoa, and baking soda in a bowl; set aside.

In a separate bowl, cream sugars, butter, vanilla, and eggs together. Add flour mixture to wet ingredients. Blend until mixed together well.

If mix is hard to roll, add up to 1/2 c. flour to make easier. Roll small amount of dough around an unwrapped Rolo (just enough to completely cover the Rolo). Then, roll the ball in sugar, and place on an ungreased cookie sheet.

Immediately after removing cookies from the oven lightly press down to flatten cookie. Bake for 7-10 minutes.
