We recently discovered there is an ingredient in many of the store bought almond and coconut milks out there that we don’t want in our milk: carrageenan. It’s an unnecessary additive and carcinogen. I first learned of it from the Food Babe (whom I love) in her article Watch Out For This Carcinogen In Your Organic Food. Pretty much anytime I learn about something from the Food Babe, it changes my life forever: i.e. I have not {for at least 3+ years) and refuse to eat at Subway or Chick Fil A, I won’t drink Starbucks coffee, and I won’t touch anything with artificial raspberry flavoring (see her article Do You Eat Beaver Butt).
After learning how easy it is to make your own, I’ve been wondering why on earth we haven’t been doing this before now. We most often drink almond milk, but also like coconut milk as well. Both are ridiculously easy. With the help of my Blendtec Designer 625 Blender this milk came together in less than 60 seconds. That’s it. can you believe it? I hardly can. So quick, so smooth, SO easy! Between the almond and the coconut, I’m not sure if I would be able to pick a favorite – they are both fantastic! We keep bins of unsweetened coconut and raw almonds on hand, so if ever we are out of milk, we simply just whip up another batch!

Homemade Coconut Milk
Ingredients
- 1 c. unsweetened shredded coconut
- 4 c. water
- 3-5 dates pitted
- ¼ tsp. Salt
Instructions

On high speed, blend all ingredients for 50 seconds.

Strain liquid through a nut milk bag into a large bowl. Squeeze as much of the milk out as you can. Transfer milk to carafe, mason jar, or airtight jar.

Store in refrigerator up to one week.

why the dates in the coconut milk?
Can I use it for cooking, like in soups etc?

Hi Leah, that’s a good question. The dates add a nice sweetness to the milk, but they aren’t 100% necessary. A bit of Stevia or some coconut sugar works well too if you prefer a sweetened milk. You sure can use it for cooking, but bare in mind that this won’t be as thick as the coconut milk that comes in the can. Hope that helps!
