When I had the healthy caramel sauce for the first time I had no idea how amazing it was going to be. Then, I didn’t realize all of the yummy different ways I could incorporate it! I can’t even tell you how many times we’ve made my Caramel Apple Oatmeal, it’s the perfect breakfast! I recently had a hankering for some caramel popcorn but alas… with my ‘no white sugar’ lifestyle I figured that was an indulgence of the past. That was until I had the idea to use the most amazing healthy homemade caramel sauce to coat a batch of fresh air-popped (non-gmo) popcorn kernels. Genius!
With Halloween quickly approaching, this is one of those treats that is crazy popular around this time of year! Although, my version doesn’t necessarily make the best popcorn balls (unless you were to add double the sauce I suppose) but it sure makes an excellent quick healthy & delicious treat. For those looking to cut sugar out in part or in full, you still can have pretty awesome treats without all of the guilt. This recipe is here to prove that! The caramel sauce was a breeze to make in my Blendtec!
Healthy Caramel Popcorn
This Healthy Caramel Popcorn will curb your sweet tooth with just the right amount of sweetness. Enjoy this during your next movie!
Ingredients
- 1/4 c. unpopped popcorn kernels
- 1/4 c. cashew butter to make, simply blend 1/2 cup of cashews in a powerful blender
- 1/4 c. coconut oil
- 1/2 c. dates
- 1/4 tsp. salt
- 1/2 tsp. vanilla
Instructions

Pop popcorn according to your air popper instructions. Blend together ingredients for caramel sauce & pour over fresh popped popcorn. Enjoy!
Recipe Notes
Because the caramel sauce is different than your traditional, you'll want to refrigerate the popcorn to store it.
