I love breakfast, and love when I get to enjoy something extra yummy! I was elated to find that I could make a gluten free version of one of my favorite breakfast and brunch recipes. I adapted my Quick & Easy Crepes and used oat flour that I made with my Blendtec Designer 625 Blender to make these delicious Gluten Free Crepes. You’ll want to head over to the Blendtec blog where I’m sharing my How To Make Oat Flour post. Surprisingly, if I were to conveniently leave out that these are gluten free and then serve them to you, I can just about guarantee you would have no idea. They are THAT good!
I wanted to sweeten them up just a touch, so I whipped up some fresh whipped cream sweetened with just a little bit of powdered sugar and some vanilla to serve them with. I then topped them with a generous helping of fresh raspberries and topped it off with a drizzle of Kodiak Cakes Raspberry Syrup (which I love because it’s made with only the finest & purist ingredients AND is naturally gluten free). There has been some discoveries and discussion about how healthy whole wheat really is for you, so while that’s being determined I figured I may as well beef up my alternative recipes for you – this one is top notch!

Gluten Free Crepes
Gluten Free Crepes are the perfect breakfast or brunch for a special morning, celebration, or just because. Light, fluffy, and wonderful!
Ingredients
- 2 eggs
- 2 tbsp. coconut oil melted & cooled
- 1 tbsp. honey or pure maple syrup
- 1 c. gluten free oat flour
- 1 1/3 c. almond milk
Instructions

Combine all ingredients in a blender. Blend on low speed until well combined, and smooth. Crepe batter will be a very thin consistency and easily pourable.

Heat a skillet over medium high heat. Grease lightly with butter or cooking spray.

Pour about 1/4 c. of crepe batter into the pan; twirl in a circular motion to coat evenly with batter.

Let cook about thirty to sixty seconds, or until the edges of the batter bubble slightly, and it's easy to slide a spatula under the edge of the crepe.

Flip crepe and cook another fifteen to thirty seconds. Remove from pan and stack on a plate.
