Now I know, I know, quesadillas don’t really need a “recipe”. But I wanted to give you something today, I was short on time, and the sun was nowhere to be found. So I consulted the girls at work and this is what we came up with. I’m not typically a quesadilla fan per say, but I honestly really, really enjoyed this! Paired with salsa and guacamole it was awesome. It would have been fantastic with sour cream but we were out. The other great thing about it is I was able to calculate the calories for the perfect calorie conscious dinner. Approx. 3/4ths of the quesadilla will run you about 500ish calories (give or take). I needed to shoot for that and I succeeded! There is however a secret ingredient packed between the goodness and melty cheese… the creole seasoning! This my friends is a treasure I was recently introduced to! It’s awesome! I found it at Wal-Mart, look for it in your local grocer spice section – you will want to have it!
Cheesy Chicken and Black Bean Quesadilla
This Cheesy Chicken and Black Bean Quesadilla couldn't be easier. It's great for a quick weeknight meal.
Ingredients
- 2 Whole wheat flour tortillas
- 2 chicken tenderloins cooked, shredded
- 1/2 c. black beans rinsed
- 2/3 c. shredded cheddar cheese
- Tony Chachere's Original Creole Seasoning
Instructions

Heat a medium sized skillet on medium high; spray with pam.

Place one tortilla in skillet and top with cheese, chicken, and black beans. Top with other tortilla.

Grill until melted, approx five minutes. Slice. Serve with guacamole, salsa, and sour cream. Enjoy.
