Can you believe tomorrow is the 4th of July? I don’t know about you, but this year is already flying by WAY too fast. Last year for the holiday we got together with some friends at the park. Each little family brought a snack or a treat to share. My darling friend Alyssa brought a Mediterranean dip that I’d never heard of or tasted before. One bite and I nearly wanted to devour the whole pan. I kid you not, I’ve wanted to make that dip every day since… and a year later I finally got around to it.
While this isn’t the exact same, the Greek flavors that I loved are there and I switched it up and made it a little different and I LOVE the way that it turned out. In fact, the word love doesn’t even describe it. The combination of all the different layers is like the most wonderful explosion of flavors in your mouth. Perfect for the holiday that ends with a sendoff of fireworks – this dip is the food equivalent to that. You may think I’m crazy, or talking this up a bit much – but I’m telling you, you’ve got to trust me.
When it comes to chips the hubs and I are pretty particular about what we buy. If there’s one brand we love, it’s Food Should Taste Good. Have you had them before? If not, you NEED to find them at a store near you. The ingredient list is stellar: they are certified gluten free, certified vegan, low sodium, certified kosher, cholesterol free, and non-GMO. Pretty much this brand was made for me and my husband. All of the things that are important to us, wrapped up in to the most delicious chips. The Multigrain are our favorite, but I’ve tried a good handful of their other products and they are all good. Paired with this Skinny Greek Dip you’ve got one heck of a healthy snack!
Skinny Greek Dip
If you want a flavor explosion in your mouth, I highly suggest you make this fantastic Skinny Greek Dip! There are no words to explain just how delicious this yummy appetizer is. Trust me, if you love Greek food, the flavors will have you begging for just 'one more scoop'!
Ingredients
- 8 oz. plain hummus (I used edamame hummus)
- 1 c. 0% fat Greek yogurt
- 2 cloves garlic minced
- 1 tsp. chopped fresh dill
- Juice of 1/2 lemon
- Pinch kosher salt
- Freshly ground black pepper
- 2 c. romaine lettuce shredded
- 1 c. marinated artichoke hearts chopped
- 1/2 c. black beans rinsed & drained
- 1 c. Roma tomato seeded, ½-inch dice
- 1/4 c. crumbled feta cheese
- 1/4 c. Kalamata olives sliced
Instructions

In a small bowl, mix together yogurt, garlic, dill, lemon juice, salt and freshly ground pepper. Set aside.

In an 8”x8” or pie pan glass dish, layer the hummus, yogurt mixture, lettuce, artichoke, black beans, tomatoes, feta and olives.

Serve with Food Should Taste Good Multigrain Tortilla Chips.
