Although I don’t give much of a care for football, I will tell you I’m excited for two reasons. 1) My dad LOVES the Seattle Seahawks. He’s been a fan since before I was born (so he’s not one of those bandwagon fans). As soon as I learned they were going to the Super Bowl I immediately called him up to hear his excitement. I’m happy for him, and hope that is team does well! 2) game day food!!!! The appetizers, party snacks, and finger foods are what I live for on this day whether I watch the game or not! 

Ever heard of Cowboy Caviar? You may have or you may have not. It’s pretty much just a bunch of diced up veggies coated with a delicious dressing to make one of my favorite dips of all time. I was first introduced to this by my friend at work who had brought it for a pot luck years ago. It was then that I realized what I had been missing all the year before.. and now, I’ll never have to go without again because I’ve got the recipe! It’s super simple: chop, drizzle, stir. Can you get much easier than that?! I think not! If you don’t have time to make this for the big game, no worries – it’s delicious any day of the year!

Cowboy Caviar is a fun type of 'salsa' with so many delicious flavors all in one place!

Ingredients

  • 2 15 oz. cans black beans, rinsed and drained
  • 2 15 oz. cans black-eyed peas, rinsed and drained
  • 2 11 oz. can shoepeg , rinsed and drained
  • 1 small diced red onion
  • 4 diced bell peppers half of each: green, red, yellow, and orange
  • 3 avocados diced
  • 3 roma tomatoes diced
  • 1 pkg. Good Seasons Italian Dressing prepared

Instructions

  1. In a large bowl, mix together all ingredients and serve with tortilla chips

    I’ve never heard of this called Cowboy Caviar until recently! But I seriously have been making something like this since I was 12! It’s one of my favorite recipes for summer. We seriously make it every other week!

    I am stumped by an ingredient you mentioned in the Cowboy Caviar! What is “shoepeg”?? I’ve never heard of it, much less that it comes in a can!!

      Great question! If you aren’t looking for it, you’ll miss it – but it’s in the canned food section with all the other corn and beans.
