It wasn’t until around the Super Bowl that I tried shrimp ceviche for the first time. A cute little friend of mine at work brought it for our pot luck. You know, shrimp is one of those things that people either run to… or run away from! I am in the crowd that is flocking towards all the shrimp. I love it in any variety: shrimp scampi, coconut shrimp, shrimp cocktail, and more! So of course when I saw this gem in the spread of delicious goodies I was all over it. One bite and I knew I had to make it for myself. So fresh. So light. So fun. So insanely ADDICTIVE!
The lime in this dip is killer. The avocado is on point. The cucumber is light. The tomatos are the pop of color and flavor to perfectly balance it out. Pretty much this is probably my favorite dip {salsa?} that I’ve had ever. Ever. That’s saying something, because I absolutely LOVE my Cowboy Caviar, and I’ve got another great salsa in the wing that I will be sharing with you very soon. Shrimp Ceviche
This refreshing Shrimp Ceviche dip has outstanding flavor! Crisp, fresh, and perfect for any party, gathering, get together, potluck, or even for no reason at all!
Ingredients
- 1 lb. medium shrimp raw
- 7 limes juiced
- 1 jalapeno deseeded & diced
- 4 Roma tomatoes chopped & juice removed
- 2 cucumbers peeled, deseeded, & diced
- 1 avocado diced
- 1 bunch cilantro stems removed & chopped
- 1/2 sweet yellow onion diced
- Salt to taste
Instructions

In a large bowl add the lime juice, jalapeno and onions.

Cook shrimp in 2 tbsp. water. Cut each shrimp into thirds.

Add all remaining ingredients including shrimp to lime juice, jalapeno and onions. Salt to taste.

Refrigerate one hour, up to overnight for best flavor. Serve with tortilla chips, over a tostada, or with any of your favorite Mexican dishes.
Recipe Notes
For best flavor refrigerate overnight. But good luck lasting that long. One bite and you'll have a hard time tearing yourself away from the bowl!
