Copycat Cafe Rio Cilantro Lime Rice // Tried and TastyThis rice is so simple yet packed with flavor. Cilantro is one of my absolute favorite herbs 🙂 Whenever I go to Cafe Rio with Wend she picks all of hers off her tostada (because she doesn’t like it) and gives it to me!!!

Hey there – made this tonight with dinner and it was great. Only thing was I used Jasmine rice and had to add a bit more liquid but- great flavor! 😉

Made this with the chicken enchiladas – I halved the recipe because I know rice makes a lot, and so mine didnt turn out so great. It smelled yummy but didnt taste right and all my liquid was gone before it finished cooking so it was hard. I will try again some day.
