This rice is so simple yet packed with flavor. Cilantro is one of my absolute favorite herbs :) Whenever I go to Cafe Rio with Wend she picks all of hers off her tostada (because she doesn’t like it) and gives it to me!!!
Copycat Cafe Rio Cilantro Lime Rice
The delicious flavors of the wildly popular Cafe Rio Cilantro Lime Rice in the comfort of your own home. Have it with your next Mexican meal!
Ingredients
- 3 c. water
- 4 tsp. chicken bouillon
- 4 tsp. minced garlic
- 1/2 bunch cilantro
- 1 can 4 oz green chilies
- 3/4 tsp. salt
- 1 tbsp. butter
- 1/2 onion
- 3 tbsp. lime juice
- 3 c. white rice
Instructions

Blend cilantro, green chilies, onion, and lime juice together in a food processor until just about pureed.

Bring water to a boil and add all ingredients.

Simmer, covered, on low for 30 minutes (or until rice is tender).

Made this with the chicken enchiladas – I halved the recipe because I know rice makes a lot, and so mine didnt turn out so great. It smelled yummy but didnt taste right and all my liquid was gone before it finished cooking so it was hard. I will try again some day.
