You’re aware of my love for food holidays right? I post a new recipe monthly that pertains in some way or another to a specific holiday about food. When I learned that March is National Nutrition Month I couldn’t wait to join with Minute® Ready to Serve Rice to bring a delicious recipe to help celebrate. National Nutrition Month focuses attention on the importance of making informed food choices and developing sound eating and physical activity habits. Not only is Minute® Ready to Serve Rice non-GMO, it is also gluten-free. Which happens to be perfect for my husband and I as he is trying to avoid gluten. The great thing about these little cups is that they are an ideal portable solution for lunch or if you’re feeling creative, breakfast (or really any time of the day) because you can eat it on the go, straight from the cup. In just 60 seconds, you have fully cooked rice for any meal or snack. I’ve got a little time for that.
There are several flavorful and wholesome varieties including Whole Grain options of Brown Rice, Brown & Wild Rice and Multi-Grain Medley, all new Basmati Rice, Jasmine Rice, White Rice and flavorful mixes. The other great thing about them is they provide easy portion control since it’s conveniently packaged in two individual single-serve cups. The idea I had in mind for this recipe is that you can provide the variety of rice and then your family can pick and chose their favorites. Creating a Hawaiian Haystack bar allows everyone to customize their lunch to exactly how they like it by adding what they want and leaving off what they don’t! It’s a win/win for the whole family!
Single Serve Hawaiian Haystacks
Ingredients
Chicken Mixture
- 1 can 13 oz. canned chicken
- 3/4 c. chicken stock
- 1/4 tsp. poultry seasoning
- 1/8 tsp. onion powder
- 1/8 tsp. garlic powder
- 1/8 tsp. black pepper
- 1/8 tsp. salt
- 1/8 tsp. parsley
- 1/8 tsp. paprika
- 3/4 c. milk divided
- 1/3 c. flour
Rice & Toppings
- Minute® Ready to Serve Brown Rice or Minute® Ready to Serve Multi-Grain Medley
- Pineapple tidbits
- Chow Mein noodles
- Green onion chopped top to bottom
- Cheddar cheese shredded
- Tomatoes diced
- Olives sliced
Instructions

In a small saucepan, bring chicken stock 1/4 c. of milk, and seasonings to a boil. Boil for just over a minute.

In a separate bowl, whisk the remaining milk and flour together. Add to the boiling mixture on the stovetop and continue to whisk briskly until mixture starts to boil. Continue to let it boil until it thickens. Add in canned chicken.

Heat Minute® Ready to Serve Brown Rice or Minute® Ready to Serve Multi-Grain Medley for 60 seconds, then assemble haystack with desired toppings. Enjoy!
