It’s official! As of last week, it’s Summer time! If you’re like me, Summer is typically your busiest time of the year. Work (in the yard, and in the office), BBQ’s, vacations, camping, entertaining, and Independence Day all come together to create the hot mess that is Summer – and I wouldn’t have it any other way! In fact, Summer has earned the ‘favorite season’ spot in my heart.
I also LOVE sharing delicious, filling food with friends and family. For me, it simply doesn’t get any better than sharing good food and laughs with loved ones while enjoying a Summer evening outdoors out on the deck, or in the yard with my feet in the grass. But remember how I said that Summer is a BUSY time for me? Yeah.. so I’m really not able to spend hours (or even half hours) in the kitchen whipping up a good meal. Now, more than ever, is when I rely on simple, straight forward recipes that can be made in a flash. I’m here today with such a recipe!
These bean and cheese quesadillas are hands down one of the quickest, most delicious recipes that I’ve made this year! You can have them out on the table and ready to eat in less than ten minutes flat, with few dishes left beyond for cleanup. The rich & creamy Three Cheese Dip is the heart of this recipe and unites the refried beans and the tortilla in a most glorious way!
These quesadillas are the definition of ‘melt-in-your-mouth’ goodness, and will practically dissolve into a heavenly cloud of tasty, cheesy bliss the moment they reach your mouth. I’m not exaggerating!

Mini Bean & Three Cheese Quesadillas
The perfect summertime finger food that's not only delicious but equally portable. Packed full of cheesy flavor you'll fall in love at first bite!
- 1/2 c La Terra Fina Sriracha Three Cheese Dip & Spread
- 1/3 c shredded cheddar cheese
- 12 mini tortillas
- 1/2 can refried beans
- 2 tbsp butter
In a small bowl, stir together the La Terra Fina Sriracha Three Cheese Dip & Spread with the shredded cheddar cheese . Spread 1/2 tbsp of the refried beans on half of the mini tortilla. Spread cheese mixture on top of the refried beans. Heat a large skillet over medium heat & melt butter. Place several quesadillas in the pan and cook until the tortillas are golden brown, 2 to 3 minutes per side. Repeat with the remaining quesadillas. Serve.
