You are in for a real treat today. I’m here to show you that you can have a delicious and healthy lunch on-the-go in no time at all. It’s alarming how often we eat out, and by ‘we’ I mean our society – I personally actually don’t eat out that often. For one, we spend way too much on our grocery budget each month to justify eating out in addition to all the groceries waiting for us in our fridge and pantry. Secondly, because you have no control over the ingredients, the calorie count of most meals are astronomical. My goal today is to show you how simple it is to make your restaurant favorites right at home. Save money AND your waistline. Let’s talk about the perfect healthy lunch & Panera Bread! Do I have any Panera fans around? One of my favorite things to do is to copycat my favorite recipes and make them right at home. There’s nothing more satisfying than being able to control the ingredients & adjust to suit your own personal tastebuds.
With a little prep ahead of time you will set yourself up for success from the very beginning. A great way to portion control is to get your hands on a meal prep container that will suit your needs. This NEW Rubbermaid® fasten + go is perfect! There are three compartments. 1. (1) sandwich 2. (1) side container with 1 cup capacity 3. (2) snack containers with 1/2 cup capacity. When you go out to a lunch spot to grab a bite to eat typically your choice is the sandwich, a bag of chips, and a soda. 9/10 times that’s what most people will chose right? When you prep your lunch at home you can have an endless variety of healthy sides to go with your sandwich. One of the great benefits from eating at home! Already by making the copycat Panera at home I was able to cut nearly 300 calories (estimated) from what Panera serves. Additionally I opted for low calorie & portion controlled sides. 1/2 cup of grapes will run you around 30 calories. 1/4 c. of cashews will run you somewhere around 170 calories. While that’s higher in calories, it’s healthy fat you’re feeding your body as opposed to other not-so-good fats. Lastly, 1/2 c. of edamame will run you just about 90 calories.
What I love about the fasten + go is how helpful it is to control overeating. With ziplock baggies you’re left to your own restraint to not fill those suckers clear to the brim (of tortilla chips if you will). The handy dandy carry strap helps make things easier when you’ve got a handful of things to carry to the office. I’ve always got my purse, my water, my notebooks, badge, and sometimes an extra sweater or coat… as my office gets pretty chilly. The other awesome thing about the fasten + go is the customizable configuration. I love that there are extra spaces for anything your hear desires. Want salad but don’t want it soggy by lunchtime? No problem! Throw the dressing into one of the extra containers and your problem is solved! Not only that, they are nesting containers so they won’t be flip flopping all over the place. Especially with the lid and base snapping together to keep everything in its place during travel. Totally brill! Copycat Panera Turkey, Apple & Cheddar Sandwich
This delicious Copycat Panera Turkey, Apple & Cheddar Sandwich is a restaurant favorite made just a bit healthier! It has a touch of crunch, tang, and a whole lot of flavor! Enjoy this specialty sandwich right at home!
Ingredients
- 4 slices marble rye bread
- 2 slices butter lettuce
- 2 oz. turkey
- 1 oz. white cheddar cheese sliced
Walnut, Cranberry & Apple Slaw
- 1/2 c. sliced cabbage
- 1/4 c. dried cranberries
- 1/4 c. walnuts chopped
- 1/4 red delicious apple chopped
Dressing
- 1/4 c. plain greek yogurt
- 1 tbsp. fresh squeezed lemon juice
- 1 tsp. apple cider vinegar
- 1 tsp. raw organic honey
Instructions

Combine all slaw ingredients in a medium-sized bowl.

In a separate small bowl, whisk together yogurt, lemon juice, vinegar & honey.

Drizzle dressing over slaw mix & stir until evenly coated.

On once slice of bread layer lettuce, turkey, cheese and slaw. Top with second slice of bread.

I used all of your ingredients and the amount. I made a change because of the calories. I really have to be careful with my calories. I am very restricted.
I never mixed the dressing and the slaw together. That allowed me to add more of the slaw and less of the dressing. The dressing is very flavorful. It really takes very little on each inner slice of the bread to give a huge bite to your sandwich. I absolutely loved it! Thank you very much.
