I love cheesecake. My favorites are my Pecan Pie Cheesecake, Mini Cheesecakes, and Pumpkin Cheesecake with Gingersnap-Pecan Crust. If those don’t tickle your fancy you can also check out my Sopapilla Cheesecake or Best Ever Cheesecake. Basically what I’m saying is, you’ve got options. The thing that’s hard about a regular cheesecake is the time that is involved with making one. Generally it has to cook for at least an hour, and then most recipes call for an hour or so of resting in the oven with the door closed plus most times an overnight refrigeration time. That’s a lot of dedication to have to wait so long to dive in. I like a dessert I can throw together and enjoy same day. Heck! I like to be able to stick a fork in it as soon as it comes out of the oven. Who needs cooling time {tell that to the roof of my mouth or tongue as I’ve burnt it several times}.

Having a single-serve dessert like this helps me not eat the entire pan. I don’t know about you, but sometimes if there’s something I can’t keep my hands off, it’s much easier when it is divided in to single servings. You can use your favorite pie filling. I prefer cherry because to me when I think of cheesecake I automatically think of cherry topping. Of course you can have strawberry, raspberry, blueberry, or any other kind of berry! The other great thing about these is they can easily be made-ahead for whatever occasion. Just keep them in the fridge until you are ready to serve.

Not only are these Cheesecake Parfaits adorable, they are perfectly portioned. These no-bake parfaits are ready in a flash!

Ingredients

  • 1 8 oz. pkg. Philadelphia cream cheese, softened
  • 3 tbsp. sugar
  • 3 tbsp. heavy cream
  • 1/2 tsp. vanilla
  • 1 tsp. fresh-squeezed lime juice
  • 3 tbsp. graham cracker crumbs
  • 3 tbsp. cherry pie filling or your favorite

Instructions

  1. In a medium bowl, beat cream cheese with sugar, heavy cream, vanilla and lime juice until smooth.

  2. In a small glass, place 1 tbsp. of graham cracker crumbs followed by 1/3 cream cheese mixture. 

  3. Top with your favorite pie filling. For best results, refrigerate at least 30 minutes (but can be eaten immediately).

Make sure your cream cheese has come to room temperature. If it hasn't you will not reach a creamy consistency but rather it will be lumpy and the lumps will be impossible to smooth out.
