Hey y’all! Believe it or not I’m still around! I’ll tell you what. Buying a house is no joke! The list of responsibilities and duties is seemingly never-ending. With that said, I wouldn’t change a thing. While it’s been crickets around here on the blog trust and believe that I’ve been a worker bee behind the scenes. I’ve been meaning to share this salad with you for WEEKS now & am finally getting around to posting it for you! More than that, I’m really excited to share with you a sweet friend of mine! This salad (which is incredible may I add) is from the newest cookbook of Mary from Barefeet In The Kitchen. I actually became friends with Mary through Snapchat and I’m so glad that I did. We have a mutual friend that introduced us at a blog conference about a year and a half or so ago in Austin (I think). I’ve LOVED getting to know her and truly enjoy her behind the scenes with her adorable family… she’s got the cutest boys I’ll tell ya! She’s constantly whipping up #allthethings to make my mouth water. In fact for Christmas I made her Almond Bars in my assortment of goodies to give to neighbors and friends. HAVE MERCY!!! They were delightful & I definitely recommend you making them sometime soon. I’m dying to make her Bostock {Brioche with Almonds} that she once posted on snap as she was making it and I nearly wanted to hop on the first flight to AZ I could find to have breakfast with her! Making it myself is on the to-do list, hopefully to be checked off very soon!
So about this cookbook of hers. You guys. You NEED this cookbook in your life. The title alone sells it: Easy & Delicious Home-Cooked Meals for Busy Families. Hello!!! Doesn’t that just SCREAM that it’s perfect for everyone?! There are too many recipes to count that I want to try and I couldn’t be happier that I started with this Blackberry, Bacon & Egg Salad with Maple Dijon Vinaigrette. Oh.M.Goodness. If the salad wasn’t tasty enough, it’s topped with the most perfect dressing pairing known to man (and I’m not being dramatic). I have never had a warm dressing on my salad. Have you? Game. Changer. I could definitely see having this yummy salad on the regular for lunch it was absolutely delightful! Two thumbs up for the recipe and two thumbs WAY up for the cookbook. Blackberry, Bacon & Egg Salad with Maple Dijon Vinaigrette
The flavors in this Blackberry, Bacon & Egg Salad marry so well together you'll want this every day for lunch! Deliciously tart blackberries, salty bacon and a to-die-for vinaigrette!
Ingredients
Salad Ingredients
- 2-3 c. chopped salad greens of your choice I used Power Greens by Taylor Farms
- 1/4 c. very thinly sliced cucumber
- 2 oz. blackberries
- 1 radish shaved very thinly (radishes aren't my favorite, so I omitted it)
- 2-3 slices crisp bacon chopped into 1-inch pieces
- 1 hard boiled egg chopped
- 1-2 tbsp. candied walnuts or pecans
- 1 tbsp. shredded very sharp cheddar or Parmesan cheese
Vinaigrette Ingredients
- 2 tbsp. olive oil
- 2 tbsp. bacon grease
- 2 tbsp. maple syrup
- 1 tsp. dijon mustard
- 1 tbsp. fresh lemon juice
- 1/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1/8 to 1/4 tsp. cayenne pepper
Instructions

In a bowl, combine the salad greens, cucumber, blackberries, radish, bacon, egg, walnuts, and cheese.

In a small jar, combine the oil, grease, syrup, mustard, lemon juice, salt, black pepper and cayenne pepper and shake well.

Drizzle the salad with the vinaigrette. Toss well.
Recipe Notes
The dressing will make approx. 4-6 servings and will keep in the refrigerator for up to a week. When ready to use, bring to room temperature or warm on the stove or in the microwave. Shake well before using.
