Chicken Salad

This chicken salad is a trademark of my old roommate Alaina. She made this for showers, family parties, roommate parties, church activities etc… She wasn’t much of a “kitchen dweller” or a cooker, she preferred the easier route! However, when she busted this out, we all loved it! Such good flavor, great amount of each of the ingredients.

Source: My friend, Alaina

8-15 boneless, skinless chicken breasts
1 whole celery
1/3 diced red onion
1 small jar Best Foods mayonnaise
2 tsp. evaporated milk
Beau Monde spice

Cook chicken until completely white. Cut into small pieces. Dice celery and red onion. In a medium sized bowl, combine chicken, celery and onion and mix together with mayonnaise and evaporated milk. Cover chicken salad mixture with Beau Monde spice. All salt and pepper to taste.

[My 2 Cents]
There’s something about chicken salad on a croissant. If you can, pick some up at the store when you are going to make this!
