This chicken salad is a trademark of my old roommate Alaina. She made this for showers, family parties, roommate parties, church activities etc… She wasn’t much of a “kitchen dweller” or a cooker, she preferred the easier route! However, when she busted this out, we all loved it! Such good flavor, great amount of each of the ingredients.
This Chicken Salad is perfect for any party! If you have a baby shower or bridal shower coming up, this makes a great go-to sandwich!
- 8-15 boneless skinless chicken breasts
- 1 whole celery
- 1/3 diced red onion
- 1 small jar Best Foods mayonnaise
- 2 tsp. evaporated milk
- Beau Monde spice
Cook chicken until completely white. Cut into small pieces.
Dice celery and red onion.
In a medium sized bowl, combine chicken, celery and onion and mix together with mayonnaise and evaporated milk.
Cover chicken salad mixture with Beau Monde spice. All salt and pepper to taste.
[My 2 Cents]
There's something about chicken salad on a croissant. If you can, pick some up at the store when you are going to make this!
