Ohmyheck people. These Oatmeal Chocolate Chunk Bars are probably in my top three favorite bars! I wasn’t paying attention, and the original version said to “whisk together dry ingredients” so I did. Flour, soda, sugar and all. THEN I read the rest of the recipe – dang it! Anyhow, they didn’t turn out as they were supposed to but I didn’t give up. I tried them again yesterday afternoon and seriously, there has never been a bar that is such a soft, melty, gooey, chocolaty goodness. Try it for yourself (I adjusted the directions so it’s a little easier to follow), you will see!
Oatmeal Chocolate Chunk Bars
These Oatmeal Chocolate Chunk Bars are rich, chocolatey, and super soft. They're delicious!
Ingredients
- 1 3/4 c. flour
- 3/4 tsp. soda
- 1/4 tsp. salt
- 1 c. oatmeal
- 3/4 c. butter softened
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 12 oz. semi sweet chocolate chunks
- 1 c. chopped walnuts I used finely diced
Instructions

Preheat oven to 375 F.

Whisk together flour, soda, salt and oatmeal in a medium sized bowl; set aside.

Beat together butter, sugars, egg, and vanilla until fluffy.

Add dry ingredients. Stir in chocolate chunks and walnuts.

Press into a greased 9x13 in pan. Bake for 18-20 minutes until light golden brown.
