You guys. I’ve been grilling like a maniac. Tell me you’re doing the same? When the weather warms up and it’s too hot to cook in the house.. is there any other way? It’s the BEST way! In fact, we’ve been grilling so much that I grilled my way through our propane without even realizing it and when I went to throw something on the next day to my shock we were out! Thankfully we had a full spare tank in reserve (phew), because my mouth was really watering for the Swiss Turkey Burgers I had put together. I’m extra excited for this post for several reasons. First and foremost in celebration of my friend Jesseca who recently released her first cookbook Foiled!
Jesseca and I have been friends for only a few years, but she’s one of my very favorite blogger friends. We met randomly by chance after I had ordered some cupcakes from her that I ordered online. From then on we became Facebook friends, attended events and conferences together. Facebook message back and forth, email and text each other. When she told me she was making a cookbook I couldn’t have been more excited for her and even more excited for the book itself: FOILED! I mean, it’s all about camping meals – you all know how much I love camping! Talk about being right up my alley!
Another reason I’m extra excited about this post is to share this delicious recipe with you. With only five ingredients, it’s one of the most flavorful dinners I’ve had with such little work to prepare. I used the new line of Johnsonville Naturals Brats and they were fantastic. Not only is this recipe super simple it’s really quick to cook (especially having the sausage sliced – but you definitely can keep them whole). This is one of so many delicious recipes including breakfast recipes, main dishes (divided into chicken, beef, seafood, and other), sides, and even dessert. PLUS Jess tells you about helpful supplies, cooking at home vs. on a grill or coals, and cooking tips. Recipes that can be made ahead are stamped with a ‘make ahead dish’ for easy recognition. Plus each recipe comes with a photo… which for me is a serious plus!
If you love camping like I do, or even if you don’t. I highly recommend Foiled! And I’m not just saying that because Jess and I are friends. Italian Sausage Tin Foil Dinner
These Italian Sausage Tin Foil Dinners can double as an at-home dinner AND a camping dinner! Simple to make, flavorful, and ready in 30 minutes. Perfection!
Ingredients
- 4 Italian sausage links uncooked
- 8 red potatoes washed
- 1 cup fresh green beans ends cut
- olive oil
- fennel salt or other salt and pepper
Instructions

Start by dicing your potatoes into bite-sized chunks. Create four rectangles of heavy duty foil. Fold up the sides creating a 1 inch rim. Spray your containers with cooking spray and divide the potatoes between them evenly.

Top with the sausage links and green beans. You can slice the sausage beforehand or you can leave it whole.

Lightly drizzle your meal with olive oil and sprinkle with seasonings. Fold up the sides to create your packet.

OUTDOOR COOKING: Place your packets onto prepared coals. Cook for 30 minutes making sure to turn a few times.

AT HOME COOKING: Bake at 415 degrees for 30 minutes

I did not use any foil, just a rimmed baking sheet. I cut the sausage into bite size pieces and cooked as directed. Everyone LOVED it!!!

I added garlic to my recipe. It took about 50 minutes to cook the packets in the oven.

This recipe looks so good! I want to try it this weekend–but I am a rookie to foil cooking, like literally have never tried it. So this may be an obvious question, but do you fold the foil up into like a tray, fill and cook? Or at some point do you cover the top so it’s more like a packet?
