What could be better than the words [breakfast] and [cookie] in one sentence? The best part about it, is these are completely healthy! I’ve been in the mood lately to spice things up for breakfast. I am sooooo not a morning person. Well. I guess I take that back. Let me break it down this way for you: if I have to wake up in the morning and go to work, mornings are not my friend (weekdays). If I don’t have plans in the morning and get to wake up and do whatever I please, mornings are my friend (weekends). Because 90% of the time I am in a hurry (overslept, stayed too long on the computer, lost track of time) I have to have to have a breakfast plan. I realize the importance of having breakfast, but sometimes if it’s not quick I run out the door without it. With these, I can make them the night before and have them ready so I can just grab and go.
Cranberry Breakfast Cookies
Cranberry Breakfast Cookies - cookies for breakfast, it's true! These cookies have healthy ingredients that will get you through until lunch.
Ingredients
- 1 1/2 c. rolled oats
- 1 c. unsweetened coconut flakes
- 1 tbsp. ground flaxseed
- 1/4 c. sunflower seeds
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 c. coarsely chopped pecans
- 1/2 c. dried cranberries or any type of dried fruit: apples, blueberries, etc.
- 3 very ripe bananas mashed
- 1/4 c. coconut oil warm enough to be liquid
- 1 tbsp. honey
- 1 tsp. vanilla extract
Instructions

Preheat oven to 350° F.

In a large bowl, combine all dry ingredients.

Stir in mashed bananas, oil, honey and vanilla until well combined.

Press 2 tablespoons of mixture into a 2 1/2-inch round cookie cutter onto a baking sheet coated with cooking spray or lined with parchment paper or a Silpat. Continue with remaining mixture.

Bake at 350° F for 25-30 minutes or until fragrant and golden. Cool on pan.

[My 2 Cents]
I'm not so much a fan of "chewy", so I prefer to cook mine a little longer. If you like chewy, by all means - go right ahead! If you like more of the crispy/crunchy texture like me, you will want to cook an additional 5-10 minutes. But watch close, because you don't want to burn or over cook them.

Perfect breakfast cookie! As a new Mom with an infant and midnight feedings this recipe is the perfect pick-me-up. I loved how easy it came together. I used cranberries and apples as my fruit and added 1 teaspoon of fresh grated ginger. Wow so delicious! Thanks for the recipe.

I’m glad to know I’m not the only one! We can suffer the morning together :) At least mornings provide great food (pending I wake up in time). Because breakfast is my favorite meal!!
