The most wonderful Mediterranean Salad featuring the delicious flavors of marinated artichokes, fresh mozzarella, savory olives, and red onion. Finish it off with the most delectable creamy feta dressing for a knockout pairing!

For the salad

  • 2 c. organic baby spinach
  • 2 c. organic mixed leafy greens including kale & chard
  • 1/2 c. quartered marinated artichoke hearts
  • 4 oz. fresh mozzarella cheese marinated with extra virgin olive oil & fresh basil
  • 4 oz. olives jubilee including Calamata, Nicoise, Picholine, & Amfissa
  • 1 c. organic grape tomatoes
  • 1/2 c. pepperocini
  • 1/2 red onion thinly sliced

For the Creamy Feta Dressing

  • 1 c. water
  • 1/3 c. yellow onion
  • 1-3 garlic cloves
  • 1/4 c. feta cheese
  • 4 tbsp. canola oil
  • 1/4 c. fresh lemon juice
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper


  1. Layer all of your salad ingredients in a bowl.

  2. Blend dressing ingredients in a blender until smooth. Drizzle desired amount over dressing.
