I recently went camping with the hubs and didn’t have much time or groceries to have your typical ‘camping’ food for our overnighter. Instead, we stopped by our local health food store and picked up some of the pre-made salads and wraps. I absolutely fell head over heels in love with the Mediterranean salad that I chose. All of my favorite flavors tossed together in a beautiful salad complimented by a zesty dressing. I was in heaven! One of my dreams is to be immersed in the Mediterranean culture. The food. The culture. The history. This salad brings a little of that closer to home (and within my budget).
I love all kinds of food, I’m not too terribly picky. One of my favorite types of food is Italian for sure. I love the pastas, the comfort, the breads, and the meats. I love it all! I especially love a good salad. The flavors of this Mediterranean salad marry so well together you almost can’t believe it. Drizzled with the creamy feta dressing, you almost won’t believe how delicious it is! The next time you’re serving your favorite lasagna or spaghetti why not start the meal with this yummy accompaniment? You won’t regret it!
Mediterranean Salad with a Creamy Feta Dressing
For the salad
- 2 c. organic baby spinach
- 2 c. organic mixed leafy greens including kale & chard
- 1/2 c. quartered marinated artichoke hearts
- 4 oz. fresh mozzarella cheese marinated with extra virgin olive oil & fresh basil
- 4 oz. olives jubilee including Calamata, Nicoise, Picholine, & Amfissa
- 1 c. organic grape tomatoes
- 1/2 c. pepperocini
- 1/2 red onion thinly sliced
For the Creamy Feta Dressing
- 1 c. water
- 1/3 c. yellow onion
- 1-3 garlic cloves
- 1/4 c. feta cheese
- 4 tbsp. canola oil
- 1/4 c. fresh lemon juice
- 1/2 tsp. sea salt
- 1/4 tsp. pepper
Layer all of your salad ingredients in a bowl.
Blend dressing ingredients in a blender until smooth. Drizzle desired amount over dressing.
