Cover riced cauliflower with water and bring to a boil. Boil 5-7 minutes until tender; remove from heat & drain.
Add garlic cloves and milk. Blend with an immersion blender until smooth. Stir in cheddar cheese, butter & salt until completely melted. Garnish with chives if desired. Serve immediately.
*To roast garlic: Drizzle a couple teaspoons of olive oil over each exposed head, using your fingers to rub the olive oil over all the cut, exposed garlic cloves. Cover the bulb with aluminum foil.
