Ingredients
1 1/2c.almond flour
1 1/2c.dried shredded unsweetened coconut
1/3c.coconut flour
2big pinches of salt
6tbsp.Grade B maple syrupor honey, or agave
4tbsp.lemon juice
2tsp.vanilla
1tbsp.lemon zest
1/4c.+ 1 tbsp. melted coconut oil
Instructions
Mix together dry ingredients in a medium-sized bowl: almond flour, shredded coconut, coconut flour, and salt. Set aside.
In a stand mixer, combine the maple syrup, lemon juice, vanilla, and lemon zest. Slowly add dry ingredients to wet ingredients.
Once combined, while your mixer is on, slowly pour in the melted coconut oil (the thickener). Batter will thicken fairly quickly. Use a 1" cookie scoop to form in to balls.
Place on a cookie sheet and refrigerate for at least an hour.
