Ingredients

  • 2 c. plain full fat yogurt
  • 1/2 c. milk of choice, I used Organic Whole Milk
  • 1/2 c. natural peanut butter
  • 1 1/2 tsp. pure vanilla extract
  • 1/4 tsp. salt
  • 1 tsp. stevia sweetener
  • 2 tsp. raw sugar

Instructions

  1. Mix together all ingredients until completely smooth. Transfer mixture to an ice cream maker and churn according to manufacturer’s directions.
  2. Eat right away as soft-serve, or freeze in an airtight container for at least a half hour if you want a more firm/ice cream like texture. You can also use this recipe even if you don’t have an ice cream machine. All you have to do is pour the mixture in an airtight container, freeze, and stir well every half hour for 2-3 hours.

[My Two Cents]
If you aren't familiar with stevia, there are many articles you can find online. Basically, it's an all-natural sweetener made from a plant. But, beware, not all brands are created equal. Food Babe has a great article worth checking out if you'd like more information. We currently use the Stevita brand, however we may be making a switch to a more natural extract version.
Also, if you do end up using stevia DO NOT use more than a couple of teaspoons. It is VERY sweet. I accidentally used... a lot more than I should have the first time I made this, it's much better in small doses :)
