Ingredients

  • 4 c. riced cauliflower
  • 1/4 c. whole milk up to 1/2 c. as needed
  • 1 roasted head of garlic*
  • 2 c. shredded cheddar cheese
  • 2 tbsp. butter softened
  • 1 tsp. Redmond Real Salt
  • 1 tbsp. fresh diced chives optional

Instructions

  1. Cover riced cauliflower with water and bring to a boil. Boil 5-7 minutes until tender; remove from heat & drain. 

  2. Add garlic cloves and milk. Blend with an immersion blender until smooth. Stir in cheddar cheese, butter & salt until completely melted. Garnish with chives if desired. Serve immediately.

Recipe Notes

*To roast garlic: Drizzle a couple teaspoons of olive oil over each exposed head, using your fingers to rub the olive oil over all the cut, exposed garlic cloves. Cover the bulb with aluminum foil.
