Ingredients

  • c. melted coconut oil
  • ½ c. honey
  • 2 eggs
  • 1 c. mashed ripe bananas about 2 medium
  • ¼ c. milk
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • ½ tsp. salt
  • ½ tsp. ground cinnamon
  • c. white whole wheat pastry flour
  • ½ c. chopped walnuts
  • 1/2 c. chocolate chips

Instructions

  1. Preheat oven to 325 degrees and line a muffin pan with 12 liners. In a large bowl, beat the oil and honey together together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Fold in nuts and chocolate chips.
  2. Pour the batter into your muffin pan and sprinkle lightly with cinnamon. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly, then transfer it to a wire rack to cool.
