Ingredients

  • 1 1/2 c. rolled oats
  • 1 c. unsweetened coconut flakes
  • 1 tbsp. ground flaxseed
  • 1/4 c. sunflower seeds
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 c. coarsely chopped pecans
  • 1/2 c. dried cranberries or any type of dried fruit: apples, blueberries, etc.
  • 3 very ripe bananas mashed
  • 1/4 c. coconut oil warm enough to be liquid
  • 1 tbsp. honey
  • 1 tsp. vanilla extract

Instructions

  1. Preheat oven to 350° F.

  2. In a large bowl, combine all dry ingredients.
  3. Stir in mashed bananas, oil, honey and vanilla until well combined.
  4. Press 2 tablespoons of mixture into a 2 1/2-inch round cookie cutter onto a baking sheet coated with cooking spray or lined with parchment paper or a Silpat. Continue with remaining mixture.
  5. Bake at 350° F for 25-30 minutes or until fragrant and golden. Cool on pan.

Recipe Notes

[My 2 Cents]
I'm not so much a fan of "chewy", so I prefer to cook mine a little longer. If you like chewy, by all means - go right ahead! If you like more of the crispy/crunchy texture like me, you will want to cook an additional 5-10 minutes. But watch close, because you don't want to burn or over cook them.
