Ingredients

  • 2 cups Spinach
  • 1 Avocado
  • 1/2 cup Grape tomatoes
  • 1/4 cupMozzarella
  • 1 Lemon
  • Fresh cracked ground pepper & sea salt

Instructions

  1. Wash spinach (if not pre-washed).
  2. Combine spinach, cubed avocado, tomatoes, and cubed Mozzarella.
  3. *Freshly squeeze lemon and drizzle as much or as little over the entire salad. Finish it off with fresh ground pepper and sea salt.

Recipe Notes

[My 2 Cents]
I've only tried this with Mozzarella I've purchase in a block and then cubed, but you could use shredded if you have to (It probably won't taste as good). *If you plan to eat the entire salad in one sitting I would drizzle all of the lemon juice. If you think you will have leftovers, only drizzle each individual serving. That way, you can refrigerate the leftovers without having a wilty ruined salad.
