Heat a medium saucepan over medium-low heat. Add the olive oil, allowing it to warm for a minute, then add the garlic. Sauté for 2 minutes, stirring constantly, until golden brown and fragrant.
Add the whole and diced tomatoes, and all seasonings, stirring to combine. Simmer the sauce for 7 minutes, stirring occasionally, then season it with additional salt, pepper to taste.
With an immersion blender, blend tomatoes to your desired consistency.
In a small mixing bowl, beat butter on high for several minutes using the paddle attachment.
After 30-60 seconds, add in remaining ingredients & continue beating another several minutes.
Transfer to an airtight container & store refrigerator (as you would with regular butter).
