Ingredients

  • 12 oz box elbow macaroni
  • ½ c. sweet red bell pepper finely diced
  • ½ c. cucumber finely diced
  • ½ c. green onion finely diced
  • ½ c. olives sliced
  • ½ c. celery finely diced
  • ½ c. cheddar cheese cubed
  • ½ c. sour cream
  • ¾ c. mayonnaise
  • 1 tbsp. yellow mustard
  • ¼ tsp. salt
  • ¼ tsp. black pepper

Instructions

  1. Cook pasta according to package. Drain and set aside.

  2. In a large bowl, add cooked pasta, bell pepper, cucumber, green onions, olives, celery, and cheese. Mix to combine.

  3. Add mayo, mustard, sour cream, salt, and black pepper. Using a large wooden spoon or spatula, gently stir together pasta and dressing, making sure to cover all of the macaroni pasta evenly.

  4. Refrigerate for 1-2 hours before serving.
