Ingredients

  • 2 tsp. olive oil
  • 1 large onion diced
  • 2 tbsp. minced seeded jalapeños or 1 4 oz. can diced jalapeños
  • 2 cloves garlic minced
  • 1 lb. lean ground turkey
  • 4 tsp. chili powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cumin
  • 1/2 tsp. dried oregano
  • 2 15 oz cans black beans, drained and rinsed
  • 2 green apples unpeeled, cored and diced
  • 1 14.5 oz can diced tomatoes, undrained
  • 2/3 c. apple juice

Instructions

  1. Heat oil over medium heat in large skillet. Add ground turkey, onion, jalapeño and garlic; cook over medium heat 6 to 8 minutes; until onion is tender and turkey is no longer pink.
  2. Stir in salt, chili powder, cumin and oregano; cook 30 seconds more. Stir in diced apple, black beans, tomatoes, and apple juice.
  3. Bring to a boil; reduce heat. Gently simmer over low to medium-low heat, covered, about 15 minutes or until desired consistency. Ladle chili into bowls.

Recipe Notes

[My 2 Cents]
Adding in the jalapeños give the chili a nice kick. If you don't like spicy (which I'm not particularly a fan of) you can always decrease the amount you use or omit it all together. One 4-oz can was just about too much for my spice tolerance, in the future I will use less. But my husband was happy with it how it was. Just depends on what you like that will work for you!
