Ingredients

  • 1 lb. ground turkey
  • 1 red bell pepper diced
  • 1 red onion diced
  • 5 cloves garlic minced
  • 1 tbsp. olive oil
  • 2 15 oz. cans kidney beans, drained and rinsed
  • 1 15 oz. cans black beans, drained and rinsed
  • 1 15 oz. cans pinto beans, drained and rinsed
  • 1 c. frozen corn
  • 2 28 oz cans crushed tomatoes
  • 4 c. water
  • 1 tbsp. chili powder
  • 2 tsp. cumin
  • 1 tsp. coriander
  • 2 tsp unsweetened cocoa powder
  • 1 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1 tsp. smoked paprika
  • 1 tsp. regular paprika

Instructions

  1. In a large pot, saute bell pepper, onion, and garlic with olive oil. Add ground turkey and brown. Add remaining ingredients. 

  2. Cook on medium-high 30 minutes. Stir frequently.
