Ingredients

Scones

  • 2 c. whole wheat pastry flour
  • 1/2 c. all-purpose flour
  • 1.4 c. sugar
  • 3 tsp. baking powder
  • 1/2 c. cold butter
  • 3/4 c. fresh blueberries washed & drained
  • 3/4 c. heavy whipping cream plus 1/4 c.
  • 1 tbsp. lemon juice
  • 1 egg
  • 1 tbsp. coarse sugar

Glaze

  • 1/4 c. fresh squeezed lemon juice
  • 1 tbsp. butter melted
  • 2 c. powdered sugar

Instructions

  1. In a large bowl, combine the flour, sugar, and baking powder. Cut in butter until mixture resembles coarse crumbs. Stir in blueberries.

  2. Whisk cream and egg together; stir into crumb mixture just until moistened, being careful not to smash the blueberries. 

  3. Turn dough onto a floured surface; knead until combined.

  4. Divide dough in half, pat into an 8-in. circle. Cut into 12 wedges and place on greased baking sheet. Brush with remaining cream. Sprinkle coarse sugar over tops.

  5. Bake at 400 F for 10-11 minutes or until golden brown. Serve warm.

For the Glaze

  1. Mix lemon juice and melted butter with the powdered sugar until dissolved. Whisk the glaze until smooth; removing any lumps. Drizzle glaze over the top of slightly cooled scones. Let the scones set a minute before serving.
