Ingredients

  • 28 oz lean ground turkey
  • 2 tbsp. sesame oil
  • 1 c. celery chopped
  • 2 c. asparagus cut into 1 in. pieces
  • 1 med. onions chopped
  • 6 cloves garlic
  • 1/3 c. liquid amino acid could substitute soy sauce
  • 2 tbsp organic raw coconut crystals
  • 2 1/2 tsp. ginger powder
  • 1 tbsp. arrowroot starch could substitute cornstarch
  • 1/4 tsp. crushed red pepper flakes

Instructions

  1. Heat a large deep skillet over medium-high heat. Add ground turkey and stir until browned and cooked through; transfer to a bowl with a slotted spoon. Drain excess fat from pan.

  2. Add sesame oil, celery, onion and garlic to skillet. Cook until vegetables have softened and onion is translucent. Return ground turkey to the pan.

  3. Add asparagus. Lower temperature to medium-low.

  4. In a small saucepan, stir together liquid aminos (or soy sauce), coconut crystals, and ginger powder. Heat until boiling.

  5. In a separate small bowl stir together arrowroot powder with 1 tbsp. cold water until blended; stir into liquid aminos mixture and whisk constantly until it begins to thicken. Immediately transfer to ground turkey and vegetables and coat evenly.

  6. Sprinkle with crushed red pepper flakes. Serve stir fry over your favorite rice.
