Ingredients

  • 1 lb. hamburger (grass-fed if possible)
  • 2 eggs beaten with 1/2 cup milk
  • 1/2 c. freshly grated Parmesan
  • 1 c. whole wheat bread crumbs*
  • 1 small onion minced or grated (1/2 a large onion)
  • 1/4 c. minced fresh flat-leaf parsley or basil
  • 2-3 cloves garlic minced
  • 1/2 tsp. oregano
  • 1 tsp. salt
  • freshly ground pepper to taste

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a large bowl, mix together all ingredients . Form into golf ball sized (2-3 in.) meatballs. Bake for 30 minutes.

[My 2 cents]
I've made these a couple of times. The first ones without the eggs and milk, and the second ones with the eggs and milk. Both were delicious! I think the perfect combo would be the eggs without the milk... that's what I'll attempt next! Also, it's SUPER easy to make your own bread crumbs instead of buying pre-made. All you have to do is broil 2 slices of whole wheat bread on high until golden brown. Then flip and broil the other side. Once the bread is "toasted" let cool for several minutes and then pulverize in a food processor. Works like a charm!
