Ingredients

Salad Ingredients

  • 2-3 c. chopped salad greens of your choice I used Power Greens by Taylor Farms
  • 1/4 c. very thinly sliced cucumber
  • 2 oz. blackberries
  • 1 radish shaved very thinly (radishes aren't my favorite, so I omitted it)
  • 2-3 slices crisp bacon chopped into 1-inch pieces
  • 1 hard boiled egg chopped
  • 1-2 tbsp. candied walnuts or pecans
  • 1 tbsp. shredded very sharp cheddar or Parmesan cheese

Vinaigrette Ingredients

  • 2 tbsp. olive oil
  • 2 tbsp. bacon grease
  • 2 tbsp. maple syrup
  • 1 tsp. dijon mustard
  • 1 tbsp. fresh lemon juice
  • 1/4 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1/8 to 1/4 tsp. cayenne pepper

Instructions

  1. In a bowl, combine the salad greens, cucumber, blackberries, radish, bacon, egg, walnuts, and cheese.

  2.  In a small jar, combine the oil, grease, syrup, mustard, lemon juice, salt, black pepper and cayenne pepper and shake well.

  3. Drizzle the salad with the vinaigrette. Toss well.

Recipe Notes

The dressing will make approx. 4-6 servings and will keep in the refrigerator for up to a week. When ready to use, bring to room temperature or warm on the stove or in the microwave. Shake well before using.
