Ingredients

  • 9 Rhodes Yeast Dinner Rolls or 6 Rhodes Texas Rolls thawed to room temperature
  • 2-3 heads garlic
  • 2-3 teaspoons olive oil
  • 1 cup ricotta cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups grated mozzarella cheese
  • 1 cup frozen spinach thawed, drained and moisture pressed out
  • red pepper flakes if desired

Instructions

  1. Spray counter lightly with non-stick cooking spray. Combine rolls and roll into an 11x14 inch oval shape. Cover with sprayed plastic wrap and let rest.
  2. Peel papery outer covering away from garlic heads. Cut 1/4 inch off the top of each head to expose the tops. Drizzle each head with 1 teaspoon olive oil. Wrap each head in foil and bake in 400°F over 30-40 minutes or until garlic cloves are soft in the middle. Let cool enough to touch and press the cloves out of their skins into a bowl. Mash with a fork and add ricotta, salt, pepper and mix together.
  3. Remove wrap from dough and move to sprayed baking sheet. Spread with ricotta mixture. Top with mozzarella cheese. Fluff spinach with a fork and sprinkle over cheese. Sprinkle with red pepper flakes. Bake at 425°F 15-20 minutes.
