9Rhodes Yeast Dinner Rolls or 6 Rhodes Texas Rollsthawed to room temperature
2-3heads garlic
2-3teaspoonsolive oil
1cupricotta cheese
1/2teaspoonsalt
1/2teaspoonpepper
2cupsgrated mozzarella cheese
1cupfrozen spinachthawed, drained and moisture pressed out
red pepper flakesif desired
Instructions
Spray counter lightly with non-stick cooking spray. Combine rolls and roll into an 11x14 inch oval shape. Cover with sprayed plastic wrap and let rest.
Peel papery outer covering away from garlic heads. Cut 1/4 inch off the top of each head to expose the tops. Drizzle each head with 1 teaspoon olive oil. Wrap each head in foil and bake in 400°F over 30-40 minutes or until garlic cloves are soft in the middle. Let cool enough to touch and press the cloves out of their skins into a bowl. Mash with a fork and add ricotta, salt, pepper and mix together.
Remove wrap from dough and move to sprayed baking sheet. Spread with ricotta mixture. Top with mozzarella cheese. Fluff spinach with a fork and sprinkle over cheese. Sprinkle with red pepper flakes. Bake at 425°F 15-20 minutes.
